    Hello I’ve just rediscovered this lovely teapot that I’d forgotten about and I don’t know anything about it at all, I don’t even remember finding it, so was very surprised when I unwrapped it.

      Production of oolong
      Oolong tea undergoes a few delicate processes to get its unique aroma and taste. Typical oolong tea is produced according to the following steps:

      Withering (?? w?idi?o). Dry in the sun or air expose to get rid of some moisture.
      Yao-Qing (?? yáoq?ng). Bruising the leaf edge to make a large surface area for oxidation. This bruise also breaks the cell walls so that the enzymes present in the cell start the oxidation process.
      Rou-Qing (?? róuq?ng). The tea leaves are thrown upside down for the next step.
      Sa-Qing (?? sh?q?ng). The process to stop further oxidation. This is done by briefly heating the tea. The heat stops all enzymatic activity.
      Cooling.
      Drying, to remove excess moisture.
