Wind-up pocket watch. Still runs. Was my Great Grandfather's when he worked on the railroad. Unsure of which railroad.

The stem pulls out to set the time. And we are having a hard time trying to get the back off. Any suggestions?
Hello! My son was visiting a friend and called me to tell me of a pocket watch. He says it's Elgin,solid gold,1876 ,15 jewels with an eagle on it. Opens on both sides and has glass over the works. Can you tell me anything about it? Sure would like to know what it's worth!
